If you have a lot of radishes and peas, you have to start doing some creative things with them, so it doesn’t get boring. This is one of a couple recipes I decided on, and I thought it would be good with a Greek spin. It was a hit, so it’s worth hanging onto.
- Radishes, cut in wedges or sliced
- Fresh green peas
- Chopped fresh mint
- Crumbled feta
- Extra virgin olive oil
- Fresh lemon juice
- Salt and pepper
- Combine all ingredients in a bowl. If you can, let it sit for 30 minutes before serving.
