Potato Parmesan Fries

Potato Parmesan Fries

Yield: Serves 4

This is a great way to have delicious fries, without frying.


  • 1 lb potatoes, cut into french fry size pieces
  • Extra virgin olive oil
  • 2 cloves garlic, chopped
  • 1 TBSP Dijon mustard
  • 2 TBSP grated parmesan, plus extra for sprinkling
  • 2 TBSP panko
  • Salt and pepper


  1. Heat oven to 425.
  2. In a large bowl, toss potatoes and oil together. Make sure all pieces are coated.
  3. Put the rest of the ingredients in the bowl with the potatoes and toss to coat.
  4. Place on a greased baking sheet. Sprinkle with a little more parmesan.
  5. Bake about 40 minutes or until potatoes are cooked and golden.

      It would work, but the texture of the center of the fries might not be as creamy as russet.
