One of my favorite things, especially right after a great pecan harvest, is some really good pecan butter. It’s so good on….well, everything! My preference du jour is on bread with a sprinkle of cinnamon.
- Extra virgin coconut oil
- Vanilla (optional)
- In a small food processor, process pecans to a fine meal. You may have to stop the processor and scrape the bowl frequently.
- Add a tablespoon of coconut oil and honey, and process. Continue adding and processing, until you get the consistency and taste you like.
- Serve it with a spoon! Or, you can serve it with bread or crackers or biscuits........
