Grits with Okra and Black Eyed Peas

Yield: Serves 6

Ingredients

  • 1 1/2 cups non fat milk
  • 1 clove garlic, pressed
  • 6 TBSP grits
  • 3 oz cream cheese
  • 1 TBSP butter
  • 1 egg yolk
  • 1 TBSP jalapeno (optional)
  • 2 cups okra, cut into pieces and blanched
  • 1 1/4 cup cooked black eyed peas
  • 1/2 tsp granulated garlic powder
  • 1/2 tsp granulated onion powder
  • Salt and pepper or all purpose seasoning like Frankly Delicious
  • 2 TBSP melted butter
  • 2 cups panko breadcrumbs or fresh breadcrumbs

Instructions

  1. In a medium saucepan heat milk and garlic just to boiling. Stir in grits, and return to boil. Lower and cook until thick.
  2. Add cream cheese and butter. Cook until cheese is melted, stirring occasionally.
  3. Remove from heat and quickly stir in egg yolk.
  4. Stir in jalapeno, okra and next 4 ingredients.
  5. Placed in greased 8x8 pan.
  6. Mix together melted butter and breadcrumbs and spread on top.
  7. Bake 350 for 35-40 min. or until heated through and golden on top.
  8. Other additions: crumbled bacon, smoked paprika, grated cheese
