Brown Butter Green Beans

Ingredients

  • Butter
  • Fresh green beans
  • Salt and pepper

Instructions

  1. Place butter in a pot or pan over medium heat. Cook, stirring constantly, until the butter becomes a very light brown. Remove from heat. Salted butter will brown faster. For info on brown butter, click here.
  2. Place green beans in boiling salted water, and cook to desired "doneness." Drain and place immediately into ice water to stop the cooking process. Drain well. You could also use frozen beans, and cook them to your done stage.
  3. Toss green beans with brown butter, salt, and pepper. Heat on warm if necessary.

Green Beans and Prosciutto

Ingredients

  • 1 TBSP extra virgin olive oil
  • 2 TBSP diced prosciutto (or pancetta or bacon)
  • 1/2 lb green beans, blanched (see above recipe for precooking beans)
  • 1 TBSP apple cider vinegar or rice wine vinegar
  • Salt
  • 1/4 tsp crushed red pepper
  • Drizzle of honey

Instructions

  1. Heat oil in a skillet on medium high. Add prosciutto and cook until browned.
  2. Add beans and cook about 5 min. stirring frequently.
  3. Add the rest of the ingredients and cook until vinegar reduces.
