Peanut Butter Cookies (Gluten Free)


Gluten Free Peanut Butter Cookies

Author: Kathy-- Here is a recipe I found in a Jan/Feb 2010 issue of Taste of Home magazine for gluten free Peanut Butter Oatmeal Cookies, click here to view. I made a few additions. As far as a gluten free cookie goes these have a good texture and taste good.


  • 1/2 cup chunky peanut butter
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 1/4 cup quick cooking oats
  • 1/2 tsp baking soda
  • 2 TBSP chocolate chips
  • 2 TBSP raisins or craisins
  • 2 TBSP chopped nuts


  1. Cream peanut butter and brown sugar until fluffy.
  2. Beat in egg.
  3. Add oats and the rest of the ingredients to creamed mixture. Mix well.
  4. Drop by tablespoonfuls onto greased baking sheet, 2 inches apart, and flatten slightly.
  5. Bake at 350° for 6 to 8 minutes.
  6. Cool on wire racks.
