Heat oil in a large skillet over medium-high heat. When hot add onions, ginger, and garlic stirring constantly. Continuing stirring and cooking until onions turn slightly limp
Add rice, cook and stir for a minute
Stir in peas and carrots and cook for a minute
Stir in shrimp and egg, drizzle with soy sauce and sesame oil, and sprinkle on coriander and pepper. Stir and heat all ingredients through.
Serve garnished with chopped green onions and cilantro
Notes: When you buy fresh ginger, just break off a small knob at the store. Then wrap it well and store it in the freezer (you can grate it frozen). Use beef, pork, chicken, shrimp or a combination. If you want a bit more moisture and more of a "Chinese food" flavor, add a little oyster sauce (in a bottle in the Asian section of the grocery store). If you have leftover fried rice, mix it with a little panko breadcrumbs and egg, make patties, coat the outside in more panko, and fry them.
