Chocolate Chip Zucchini Bread (Gluten Free)

Ingredients

  • 1/2 cup canola oil
  • 1 cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1 1/2 cup grated zucchini
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup gluten free flour mix
  • 1/2 cup cocoa powder
  • 1 tsp xanthan gum*
  • 1 cup chopped nuts
  • 1 cup chocolate chips

Instructions

  1. Preheat oven to 350.
  2. Mix together oil, sugar, eggs, vanilla and zucchini. Set aside
  3. Mix together the dry ingredients. Then combine with sugar mixture.
  4. Mix in the nuts and chocolate chips.
  5. Bake for 50 to 60 minutes.
  6. Note: *Xanthan gum helps create the structure of the bread, It's available in natural food stores, or in health food sections of some grocery stores (like HEB).
